  • 1 white onion, chopped
  • 1 cup carrots, chopped
  • 1½ cup celery, chopped
  • 3 Tbs olive oil
  • 2 cloves garlic, minced
  • 2 tsp dried basil
  • 2 tsp dried oregano
  • 3 bay leaves
  • 1 (24 oz.) can petite diced tomatoes can or box
  • 5 cup water
  • 1 lb red lentils
  • 1 cup kale, thinly chopped
  • 2 Tbs white wine vinegar
  • ½ tsp salt
  • ½ tsp pepper
  1. For Prep:
  2. Chop onion, carrots, celery. Thinly chop kale.
  3. Mince garlic.
  4. To Make:
  5. In a large soup pot, combine onions, carrots, celery, and olive oil. Sauté with the lid on over medium heat for about 15 minutes until soft.
  6. Add garlic, basil, and oregano, stir and cook for 2-3 more minutes.
  7. Add bay leaves, tomatoes, water, and lentils. Stir and bring to a boil.
  8. Reduce heat and simmer for one hour.
  9. Stir in kale, vinegar, salt and pepper. Enjoy!
