Low- FODMAP Mixed Fruit Salad
Ingredients
- 1½ lb papaya
- 2 cup pineapple, chopped
- 2 oranges, segmented
- 2 limes, juiced (3 tbsp lime juice)
- ½ tsp salt
- 2 Tbs cilantro, fresh, finely chopped or other herb
- 1 seedless cucumber, diced
Instructions
- Prep
- Peel and dice (and seed, if necessary) papaya, pineapple, cucumber, and orange. Juice lime.
- Make:
- Combine the diced fruit and cucumber in a shallow serving dish or bowl.
- Mix the lime juice and salt in a small bowl.
- Pour the mixture over the fruit, add the cilantro, and toss gently but well. Serve.
