Lentil Soup

Ingredients
- 1 white onion, chopped
- 1 cup carrots, chopped
- 1½ cup celery, chopped
- 3 Tbs olive oil
- 2 cloves garlic, minced
- 2 tsp dried basil
- 2 tsp dried oregano
- 3 bay leaves
- 1 (24 oz.) can petite diced tomatoes can or box
- 5 cup water
- 1 lb red lentils
- 1 cup kale, thinly chopped
- 2 Tbs white wine vinegar
- ½ tsp salt
- ½ tsp pepper
Instructions
- For Prep:
- Chop onion, carrots, celery. Thinly chop kale.
- Mince garlic.
- To Make:
- In a large soup pot, combine onions, carrots, celery, and olive oil. Sauté with the lid on over medium heat for about 15 minutes until soft.
- Add garlic, basil, and oregano, stir and cook for 2-3 more minutes.
- Add bay leaves, tomatoes, water, and lentils. Stir and bring to a boil.
- Reduce heat and simmer for one hour.
- Stir in kale, vinegar, salt and pepper. Enjoy!
